The Blood Glucose Curve

There are only about four to five grams of glucose dissolved in your entire bloodstream — roughly a teaspoon. A single meal can deliver ten times that much, and yet the concentration usually moves by less than 50 mg/dL and is back where it started within a couple of hours. That flat-ish line is not the absence of activity. It is two hormones pulling in opposite directions, minute by minute. Build a meal and watch them work.
